Happy Independence Day!

It’s so hard to believe that it’s already July! They say time flies when you’re having fun, and I couldn’t agree more. We’ve lived in Texas for 20 months already and it seems like just yesterday we were unpacking boxes.

It is hot, y’all. Like, five minutes outside and you need a second (or third!) shower. We set up misters around the paddock for all of the animals to try to stay cool. While this helps, it also makes for a muddy mess. Frostee and Ranger love to dig holes and lay in them to stay cool. You’d think we have pigs around here with all the muddy holes we’ve got! Ranger alternates between looking like a fluffball and like a stray dog covered in mud.

July is our favorite month! It’s Josh’s birthday month, and the month we first met. Plus it’s smack dab in the middle of summer and even though we’re not in school any longer, summer is still the greatest!

Josh even changed our outdoor lights to red and blue to celebrate Independence Day!

Josh and I love to BBQ on the 4th of July. Even when it’s just the two of us, we go all out! This year, we put a brisket and some corn on the smoker. I also made pasta salad and the softest dinner rolls in the whole world!

I don’t know how it is where you live, but here in South TX, they love their fireworks! There are roadside fireworks stands just about every mile here. Last 4th, we heard fireworks every night for about two weeks. This year was different. I don’t know if it was the economy, or the extremely dry conditions, but we hardly heard any. Corpus Christi does a big fireworks display down by the bay, so we watched that on TV in our air conditioned home on our comfy couch šŸ˜ No heat, no bugs, no fighting for a good seat or walking for miles to our parking spot. It was perfect!
